It's really variable. I normally work in an office that handles a lot of paperwork and customers looking to export animals and/or animal products, or travelling with their pets internationally. I spend a fair amount of time helping customers and veterinarians troubleshoot the requirements that countries place on animals coming there.
I also get to experience different aspects of what the USDA does. I've been out to collect samples from slaughter facilities, work at port of entry inspection facilities at the US/Canada border, and even got to deploy as part of disease outbreak response team.
