Adjunct faculty in the CSU system tend to be evaluated by teaching more than research or publication. If it were me, I'd make contact with someone who previously taught or currently teaches the courses you plan to teach. Borrow their syllabus and course schedule, spend time tailoring yours to more closely align with what's already being taught there, and show up to the interview with a full plan for the upcoming semester.
If you do mention research or publication, I'd emphasize the role small r research plays in your own self-assessment of your teaching practice. I'd also at least have a couple walk-in conversations with various offices that will matter to your students: Counseling, Financial Aid, various other offices over in the Mary Stuart Rogers building.
