The day in the life of a research assistant is very independent. Depending on the professor you may either have scheduled weekly meetings, or unscheduled meetings. Outside of those meetings you will be left alone for the majority of the time, during which you will do the research you and the professor discussed in the meetings. In economics, this is either data analysis or computational modeling, both of which require a good grasp of various programming languages - usually, but not always, Stata/R for the former, and Matlab/Python/Julia for the latter.
