Mechanical Design Engineer

Mechanical Design Engineer –
Manufacturing Systems
Pleasant View, Utah | Full Time

Engineer the Future of Food Manufacturing
Some engineers spend their careers behind a desk. Others design something in CAD, head into the shop to build it, install it on the production floor, watch it run, and immediately start thinking about how to make it even better.

If you're the second type, keep reading.

The Coconut Cult is scaling one of the most advanced fermentation and automated food manufacturing operations in the country. We're looking for a hands-on Manufacturing Systems Engineer who wants to solve real manufacturing problems, improve highly automated equipment, and help build the future of our manufacturing operation.

This isn't a role where you'll inherit yesterday's designs.
It's an opportunity to build tomorrow's.

This Role Is Probably For You If...
You'd rather spend time on the production floor than sitting behind a desk.
You've stayed late in the machine shop because you wanted to finish building something.
You see a piece of equipment and immediately start thinking about how it could work better.
You enjoy designing, building, testing, troubleshooting, and continuously improving
mechanical systems.
You don't wait for someone else to solve problems. You naturally take ownership and figure things out.
You get more satisfaction from seeing your ideas improve a real manufacturing process than watching another CAD model sit on a screen.
You enjoy taking projects from concept through implementation and seeing the results firsthand.
If you're reading this and thinking, 'That's exactly how I'm wired,' we'd love to meet you.

Success in this role comes from understanding how equipment performs in the real world, identifying opportunities for improvement, and taking ownership from
concept through implementation.

What You'll Build
 Design tooling, fixtures, guards, replacement parts, and machine improvements.
 Create CAD models using SolidWorks, Fusion 360, AutoCAD, or similar software.
 Fabricate, machine, assemble, and test prototypes.
 Use 3D printing to rapidly validate new ideas.
 Improve equipment reliability, throughput, ergonomics, and operator usability.
 Troubleshoot production equipment and perform root cause analysis.
 Support startup, commissioning, and optimization of automated manufacturing
systems.
 Partner with OEMs during equipment installation and startup.
 Develop engineering documentation, equipment files, spare parts records, and standard work.
 Learn every stage of the manufacturing process from ingredient receiving through fermentation, filling, packaging, and finished goods.

No two days look the same. That's exactly how we like it.

What Success Looks Like
 Improve equipment reliability and uptime.
 Increase manufacturing throughput.
 Reduce downtime through practical engineering solutions.
 Design improvements operators actually enjoy using.
 Support production startup and equipment optimization.
 Build engineering systems that scale with company growth.
 Become the engineer people seek out because you solve problems, not because of your title.

Who We're Looking For
We're intentionally looking for someone early in their engineering career with tremendous upside.
You don't need ten years of experience.
You do need to love building things.

Required
 Bachelor's degree in Mechanical Engineering, Manufacturing Engineering, Mechanical Engineering Technology, or another closely related engineering discipline.

 Hands-on engineering experience through internships, co-ops, manufacturing projects, prototype development, senior design, or equivalent practical engineering experience.
 Experience with SolidWorks, Fusion 360, AutoCAD, or similar CAD software.
 Strong mechanical aptitude and problem-solving ability.
 Ability to work independently with minimal supervision.
 Comfortable collaborating with Engineering, Operations, and Maintenance.
Preferred Experience
 Machine design
 Manufacturing automation
 Food or beverage manufacturing
 CNC machining
 Welding or fabrication
 3D printing
 PLC exposure
 Robotics
 Vision systems
 Root Cause Analysis
 Continuous Improvement
 Lean Manufacturing
 OEM equipment startup or commissioning
 Formula SAE, Baja SAE, robotics competitions, capstone projects, or other hands-on engineering programs
 Undergraduate research or applied engineering projects involving mechanical systems
 Manufacturing equipment design, fabrication, machining, automation, or rapid
prototyping experience

Why Engineers Love This Role
Most entry-level engineers spend years revising drawings someone else created.
Here, you'll own projects.
You'll identify opportunities.
You'll design solutions.
You'll build prototypes.
You'll install improvements.
You'll watch your ideas make production better.
Then you'll do it all again.
Very few engineering roles provide this level of ownership so early in your career.

Why The Coconut Cult?
We're building more than a manufacturing facility.
We're building a world-class engineering culture centered around curiosity, ownership, collaboration, and continuous improvement.
If you're excited by difficult problems, rapid learning, and seeing your work make a measurable impact every day, you'll fit right in.

Benefits
 Competitive salary based on experience
 100% company-paid medical, dental, and vision coverage for employees and their families
 401(k) with company match
 Paid Time Off
 Paid Holidays
 Company-paid Life Insurance
 Professional growth alongside an experienced engineering team
 Opportunity to help build one of the fastest-growing and most innovative food
manufacturing operations in the country

Ready to Build Something That Matters?
We're not looking for someone who simply wants an engineering job.
We're looking for someone who wants to solve problems, build better manufacturing systems, and leave every piece of equipment a little better than they found it.
If you're the kind of engineer who can't walk past a machine without wondering how to make it better, we think you'll feel right at home here.
