The Summer Manager Intern is a hands-on, learning-focused position designed to provide real-world experience in high-volume pub and operations. This position will work closely with the General Manager and management team to learn the standards, systems, and practices required to successfully operate Short’s Brewing Company.This role is designed for someone interested in hospitality, restaurant management, craft beer, or business operations who is eager to learn, take on responsibility, and contribute to a fast-paced team environment.The Summer Manager Intern will receive exposure to FOH management, BOH operations, beer garden operations, guest service, food running, bartending, hosting, events, and daily operations.Because summer is a high-volume season, some training objectives may be learned progressively throughout the season. The expectation is that, by the conclusion of the summer season, the intern will have a strong understanding of Short’s Brewing Company’s policies, procedures, service standards, and operational practices and will demonstrate competency in the core areas outlined below.Essential Duties and ResponsibilitiesFOH Management & OperationsThe intern will learn and demonstrate competency in the daily operation of the Front of House, including:Understanding and completing opening management duties.Learning how to prepare and manage daily floor charts.Assigning cleaning and side-work responsibilities.Planning and managing employee breaks.Effectively running an opening shift.Understanding and following SOPs for beer changes and menu changes.Updating specials on the website.Updating and printing feature boards.Updating beer lists and the Ultimate Flight list.Updating Toast, including loop counts, featured Mac & Soup, and other applicable items.Learning how to set up and count down cash drawers.Understanding and completing closing procedures.Understanding South End procedures, including preparing for events when applicable.Communicating clearly and effectively with staff.Understanding how and when to make employee cuts based on business needs.Conducting table touches and interacting with guests.Participating in and leading pre-shift huddles as appropriate.Completing the Beer Test and Menu Test.FOH Training & Guest ExperienceThe intern will gain hands-on exposure to multiple FOH positions in order to develop a complete understanding of taproom operations.Pubtender Shadowing:Learn how to set a table and service area up for success.Learn how to input orders and organize seat numbers.Learn table numbers and sections.Understand the flow of service from the bartender/pulltender perspective.Host Shadowing:Understand server rotation.Learn table numbers and sections.Understand seat plotting.Learn how to run the floor.Answer and appropriately direct take-out phone calls.Busser Shadowing:Learn how to properly clean and reset a table from top to bottom.Communicate effectively with the host when a table is clear.Take dishes, garbage, menus, and other materials to their proper locations.Efficiently run food orders from the kitchen to the appropriate tables.The intern should ultimately understand how these positions work together to create an efficient and positive guest experience.Food Expo & Food RunningThe intern will develop competency in the expo position and become a leader in coordinating food from the kitchen to the guest.Responsibilities and learning objectives include:Become knowledgeable and competent with menu items.Understand menu modifications and ensure modifications are correctly executed.Ensure food is made and plated according to Short’s standards.Properly organize and tray orders according to tickets.Ensure appetizers and full-ticket orders are sent out appropriately.Communicate clearly with kitchen landers and kitchen staff.Communicate food timing, issues, and special requests to FOH as needed.Lead food runners and bussers during service.Communicate sauces and other items that need to be prepared.Communicate loop trays and other service needs.Coach food runners and bussers to remain productive and on task.Be fast, organized, and efficient in getting food from the window to the guest.The expectation is that the intern will develop the ability to confidently manage the expo position during high-volume service.BOH Exposure & Food QualityThe intern will gain exposure to BOH operations and develop an understanding of how the kitchen and FOH work together.Learning objectives include:Learn how to properly land pizzas.Learn how to finish specialty pizzas.Understand the correct number of cuts for different pizza sizes and styles, including:Small/GFLargeParty cutDevelop an understanding of kitchen workflow and food production.Serve as a second set of eyes to help ensure food is prepared correctly.Identify food quality or production concerns and communicate them to management.Understand how food timing and kitchen production affect the guest experience.Communicate effectively with BOH staff regarding food timing, menu education, limited quantities, and service needs.Beer Garden OperationsThe intern will gain experience supporting and managing Beer Garden operations, including:Evaluate staffing needs based on business volume and anticipated guest traffic.Develop a strong knowledge of the products being featured, including Joyn and Canpagne.Continue developing overall beer and product knowledge.Understand what beers are coming on deck and when changes are expected.Ensure appropriate beer signage is available and updated for the trailer.Communicate beer changes and product information with the appropriate staff.Support efficient service and guest experience in the Beer Garden.Assist with events and high-volume operations as needed.Daily OperationsThe intern will assist management with the overall operation of the tap including:Monitor and assist with bussing, pulltending, hosting, food running, and guest service as needed.Monitor cleanliness and organization inside and outside the taproom.Report maintenance concerns to the Maintenance Department.Report IT issues to the IT Department.Answer phones and transfer calls appropriately.Understand and utilize Toast and related hardware.Process and audit daily deposits.Print and maintain current beer lists and other service materials.Update website, beer lists, slats, and POS information as beers and menu offerings change.Assist with keg changes as needed.Work with the Bellaire Brewery and Elk Rapids Production Facility to obtain product information and monitor draft quality.Communicate product concerns and beer changes with brewers and management.Assist with events, groups, and special programming.Work with food trucks to communicate events, groups, specials, and operational needs.Identify and help resolve immediate operational issues.Provide floor support during high-volume periods and events.Events & Guest ExperienceThe intern will assist with planning and executing events and will gain an understanding of how events affect taproom operations.Responsibilities include:Assist with event setup and execution.Understand South End event procedures.Communicate event information to staff.Help coordinate staffing and operational needs for events.Work with food trucks and other event partners as needed.Monitor guest experience during events and high-volume periods.Address guest concerns professionally and appropriately.Report significant guest issues to management.Help ensure guests receive the best possible Short’s Brewing Company experience.Leadership & CommunicationAs the intern develops throughout the summer, they will be expected to take increasing ownership of operational responsibilities.The intern will:Communicate effectively with management, coworkers, and guests.Lead by example during busy service periods.Keep staff informed of operational changes.Participate in pre-shift communication and huddles.Help keep team members on task during service.Ask questions and seek clarification when needed.Accept feedback and apply it to future performance.Identify operational problems and help develop solutions.Promptly report personnel, safety, policy, or operational concerns to the General Manager.Demonstrate professionalism, reliability, and a positive attitude.Training & Development ExpectationsThe Summer Taproom Manager Intern is expected to actively participate in training and demonstrate progress throughout the summer.By the conclusion of the summer season, the intern should have a strong working knowledge of:FOH opening and closing procedures.Floor planning and staffing.Break planning and employee cuts.Beer and menu change procedures.Toast and related POS functions.Cash drawer setup and reconciliation.Guest service standards.Pubtender, host, and busser responsibilities.Food running and expo.BOH food quality standards.Pizza landing and finishing.Beer Garden operations.Beer and product knowledge.Event procedures.Short’s Brewing Company policies, SOPs, and service standards.The intern is not expected to master every responsibility immediately.
