General Manager
Position Summary As a Manager at Paco's, you will lead and oversee daily restaurant operations, ensuring that the team delivers exceptional food, outstanding service, and a welcoming environment for guests. Managers are key in setting a positive example, motivating staff, and implementing Paco’s commitment to excellence and customer satisfaction.
Primary Duties & Responsibilities Daily and Weekly Duties Handle all bank deposits (on Monday’s and Friday’s) and ensure adequate cash funds are maintained in the restaurant on a daily basis. Attend all required management meetings, whether virtual (with camera on) or in person. Conduct regular leadership check-ins, including one weekly touchpoint with shift supervisors and one monthly meeting with current store staff to support alignment, performance, and professional development. Lead daily pre-shift huddles prior to store opening and end-of-day huddles after store close to communicate priorities, updates, and operational expectations. Verify food quality and menu execution by evaluating at least two meals per shift to ensure consistency and adherence to brand standards. Provide a daily written handoff communication to shift supervisors to ensure continuity, clarity, and alignment across shifts.
Leadership and Team Management Lead and oversee the full employee lifecycle, including interviewing, hiring, onboarding, training, performance management, and termination decisions in compliance with company policies and employment laws. Develop, publish, and manage weekly schedules to ensure optimal staffing levels aligned with business needs and labor targets. Provide ongoing mentorship, coaching, and constructive feedback to foster a collaborative, accountable, and high-performing team environment. Review performance documentation and make informed corrective action decisions, ensuring timely and professional communication with team members. Model, promote, and enforce Paco’s Core Values to maintain a positive, respectful, and inclusive workplace culture.
Operational Management Manage labor and food cost targets through effective forecasting, budgeting, and operational controls to drive profitability. Maintain full accountability for store KPIs, regulatory compliance, and overall financial performance. Establish operational strategies, staffing models, and priorities that align with company goals and support sustainable growth. Oversee inventory management, ensuring accurate stock levels and efficient ordering processes to minimize waste and shortages. As a salaried management role, the General Manager does not participate in or receive distributions from any tip pooling arrangements. Ensure food safety, sanitation, cleanliness, and workplace safety requirements are consistently met.
Guest Experience Resolve guest complaints promptly and professionally. Cultivate a culture of hospitality to provide an exceptional dining experience. Collect and analyze guest feedback to identify areas for improvement. Assure dining are is kept clean. Document, address, and de-escalate all guest concerns (including delivery and apps concerns).
Financial Accountability Manage labor, food, and operational expenses to align with budget goals. Analyze and report store performance, trends, and results to senior leadership, providing insights and recommendations for continuous improvement. Ensure cash handling procedures are followed and report discrepancies.
Safety and Compliance Qualifications Adhere to food safety, health, and cleanliness regulations. Oversee equipment maintenance and operational compliance. Enforce all policies, procedures, and safety protocols within the restaurant. Previous management or leadership experience in a restaurant or similar environment is required. Strong interpersonal, organizational, and problem-solving skills. Proven ability to motivate and manage a team. Flexible availability, including evenings, weekends, and holidays. Ability to work in a fast-paced, high-stress environment while maintaining a calm demeanor. Good understanding of financial principles, including profit and loss (P&L
